I made some quinoa the other night and decided to try to put together a new salad. Zuchini is delicious right now and there is this great yellow variety out so I decided to incorporate that in my salad. As usual I don't really have a recipe but give this a try.
Ingredients
- About 3 cups of cooked quinoa - about 1 cup uncooked
- 1/2 of a red onion chopped - about 1 inch pieces
- 1/2 of a yellow and 1/2 of a green zuchini
- Feta, asiago, or parmesan cheese or a mixture of - to taste :)
- 2-4 cloves of garlic
- about 2 tablespoons of olive oil
- 1 container of baby tomatoes
- 1 cup of basil whole and then chop small
- salt and pepper to taste
Directions
- Chop onion, zuchini, and basil and saute it in a frying pan with olive oil and minced or pressed garlic (cook them el dante so they still have some crunch) - let cool
- Cook quinoa and cool
- Chop baby tomatoes in half
- once the vegetables and quinoa are cooled mix all the ingredients in a bowl with your cheese mixture and salt and pepper to taste
