New Salad Creation PDF Print E-mail

I made some quinoa the other night and decided to try to put together a new salad.  Zuchini is delicious right now and there is this great yellow variety out so I decided to incorporate that in my salad.  As usual I don't really have a recipe but give this a try.

Ingredients

  • About 3 cups of cooked quinoa - about 1 cup uncooked
  • 1/2 of a red onion chopped - about 1 inch pieces
  • 1/2 of a yellow and 1/2 of a green zuchini
  • Feta, asiago, or parmesan cheese or a mixture of  - to taste :)
  • 2-4 cloves of garlic
  • about 2 tablespoons of olive oil
  • 1 container of baby tomatoes
  • 1 cup of basil whole and then chop small
  • salt and pepper to taste

Directions

  1. Chop onion, zuchini, and basil and saute it in a frying pan with olive oil and minced or pressed garlic (cook them el dante so they still have some crunch) - let cool
  2. Cook quinoa and cool
  3. Chop baby tomatoes in half
  4. once the vegetables and quinoa are cooled mix all the ingredients in a bowl with your cheese mixture and salt and pepper to taste
